Bat Wings

         Here is a fun halloween recipe to scare your friends, check out the bat wing picture in our gallery.
 Bat Wings
Serves 12
5 lbs Chicken Wings (you want whole chicken wings)
2 cup Pineapple juice
Juice of 1 orange
1 cup Soy Sauce

1/4 cup Mirin

2 tbs Ginger, minced
4 cloves Garlic, minced

½ cup chopped green onions
1/4 c Brown Sugar

2 t Rice Vinegar
2 t Sesame Oil

1 tbs Thai Chili paste
1 t red pepper flakes
1oz Black food coloring jell

1. Combine pineapple juice, orange juice, soy sauce, mirin, ginger, garlic, brown sugar, rice vinegar, sesame oil, Thai Chili paste, Red pepper flakes And black food coloring jell.  Blend all ingredients until well combined. Place marinade in a large zip lock bag and place chicken wings into bag. Marinate for a minimum of 24 hours but no longer than 48 hours.
Cook the Chicken Wings
Preheat oven to 425° F. Line a sheet pan with parchment paper.
1.  Remove chicken wings from marinade and lay chicken wings in an even layer on lined sheet pan.  Brush wings with extra marinade.
2. Bake for 20 minutes, flip chicken wings over and rotate pan, then bake for another 20 minutes or until chicken wings are cooked all the way threw.
3. Chicken wings will be a purplish black color. Serve chicken wings with teriyaki sauce with chopped green onion and red pepper flakes for dipping. This is guaranteed to creep out all your friends

Weekday Meal Preparation


Let Chef Melrose create personalized and palette specific weekday meal plans for you and your family! Catering to your own unique desires, she will design healthy, gourmet entrees according to your specifications-   dietary restrictions, weight loss goals, or any other unique requests, included.


How it works:


Chef Melrose will meet with you for a Client Assessment in which all your entrée wants and needs will be discussed and established. Based around your requests, she will then design a customized menu and submit the menu for your approval. A designated cook date is scheduled once the menu is complete. On the morning of your cook date, Chef Melrose will personally shop for all of the ingredients included in your meals for the week, and then prepare the entrees in the safety and privacy of your own kitchen. (She will provide and bring all professional equipment needed for food preparation.) Once preparation is complete, your entrees for the week will be packaged and stored, and your kitchen will be thouroughly cleaned and left "as new". Chef Melrose will leave you with simple, easy-to-follow instrustions on how to go about handling and heating your entrees so that you  can enjoy your pre-made dinner selections at your own convienence. The main vision behind Melrose Catering's Weekday Menu Planning and Prep, is to provide people with the ease and convenience of not having to stress over planning, shopping, and alotting time for cooking meals on a daily basis.  You will save both time and money, while enjoying the benefits that only a personalized "gourmet touch" can provide.
